- 1 small tomato, sliced
- 2 T. almond flour
- 1 tsp. nutritional yeast
- salt and pepper to taste
- Grease 10-inch skillet.
- Mix dry ingredients in a small bowl.
- Place each tomato slice in the dry mixture and coat on each side.
- Put coated tomato slices in the skillet on medium-high heat.
- Cook on each side until lightly browned.
The tomato I used was quite small, so if you want to use a bigger tomato or multiple tomatoes, just double, triple, or even quadruple the ingredients.
